To make this fresh and delicious recipe I was inspired by my friend David’s Instagram account (@ricepaella) which I have admired his way to create a dynamic and simple proposal of a dish commonly prepared here in Spain: melon with ham. In this occasion we will prepare a version like ice cream stick, I think it is a very fun and attractive proposal when it comes the time of serving it and eat it. I encourage you to prepare it because it’s very appropriate with this hot weather.

  1. Put the sugar and water in a saucepan at medium heat for couple minutes until the sugar is dissolved and looks like a syrup. We let it cold at room temperature.
  2. Cut the melon in little pieces and smash it with the syrup, add a pinch of salt and a few drops of lemon juice. Make sure the mix is well smashed and homogeneous.
  3. Put the mixture in the molds and place it in the freezer until the next day.

“Before going to the next step you have the choice to add a little bit of ham inside the ice creams, but we don’t recommend adding to much because the ham loses its flavor. It is better leave it to the end as shavings, this way you will get more contrast.

Before serving, to add the ham shavings, dry the ham slices by putting them in the microwave for 1 minute. Let it cold so it gets hardened. When they’re hard, crunch it in a mincer.
