recipe - green garlic rice woth squids

Hello rice lovers, I love this rice and specially if green garlics are FRESH and have such a good smell.... UHMMMM. I prefer to buy them in the CENTRAL MARKET OF VALENCIA. Mrs Pilar sells really good and fresh green garlic.
  • 1 pound of rice
  • 50 ounce fish soup
  • 1 blunde of green garlic
  • 2 medium sized squids
  • 1 onion
  • 1 tomato
  • 4 ounce extra virgin olive oil
  • ¼ teaspoon of salt
  • Paprika and sweet pepper
  1. First we pour oil into the paella, and set to a medium heat.
  2. Cut the onion in julienne strips and fry in the paella until it's browned, then we take it to a side of the paella.
  3. Add the washed squid cut into thin strips and add salt as required.
  4. When the squid has left all this juice out in the paella, That means it's ready 🙂
  5. Take the squid to a far side of the paella, then we add the green garlics with a pinch of salt and fry gently until golden, finally we put them in a side of the paella and set minimun heat.
  6. Add one teaspoon of paprika and one of sweet pepper, we remove for a few seconds, consecutively, add the tomato that we have previously scratched.
  7. When the tomato is well fried, we mix all the ingredients together in the paella, reduce the heat and simmer for 5 minutes.
  8. Now we add the rice and mix all the ingredients for one minute.
  9. Pour the hot fish soup into the paella and increase the fire for the next five minutes.
  10. Reduce the heat for the next five minutes, taste and add salt as necesary.
  11. During the last five minutes, it's time to reduce heat to minimum power and leave to stand, done it's ready to be served.

I want to tell you that whenever I leave my rice to stand, I use aluminium foil to cover it for ten minutes.
